Nasi Goreng Ayam – Balinese Chicken Fried Rice

Nasi Goreng Ayam Recipe

Ingredients

  • 200 g chicken breast
  • 2 large red chillies
  • 5 Asian shallots
  • 2 garlic cloves
  • 1 large carrot
  • 2 spring onions
  • 3 eggs
  • 500 g cooked rice (best is 1 day old rice)
  • 2-3 tbsp Kecap Manis - Indonesian sweet soy sauce (one based on shellfish, other based on soybeans solely)
  • 2 tbsp ketchup
  • sea salt and sugar
  • 50 ml frying oil

Instructions

1. Wash and dry the chicken breast and chop it into small pieces. Repeat with the vegetables.
2. Peel and wash the shallots and garlic and deseed the chilis before cutting it into small pieces. Crush the shallots, garlic and chilis with a pinch of salt and sugar in a mortar until you get a fine paste.
3. Fry off the paste in 50 ml of oil until it gets slightly brown. Set aside.
4. Fry your chicken in some oil but try not to brown it. Add the paste and a dash of the excess oil from the paste. Mix well.
5. Add your eggs to the pan and scramble them. Mix again before adding your veggies. Keep moving them until they are almost tender but still a little crunchy.
6. Mix in the rice and fry it until it's warm and you have an even distribution of the ingredients in the rice. Now you can add the sweet soy sauces and ketchup to taste, add some salt to taste to finish off.
7. Mix well, before frying for another 2 minutes. Enjoy this simple and delicious dish!
