Tomato and Herb Butter Recipe

Ingredients

Tomato Butter
  • 125 g butter (at room temperature)
  • 4 dried tomatoes (store-bought or homemade and soaked)
  • 2-3 tbsp tomato puree
  • some Italian dried herbs
  • 2 garlic cloves
  • salt
Herb Butter
  • 125 g butter (at room temperature)
  • some fresh chives, parsley, cress or other fresh or frozen herbs
  • 2 garlic cloves
  • salt

Instructions

1. For the tomato butter: Get the sun dried tomatoes (pickled in oil or pickled yourself*) and chop them coarsely, add them together with the Italian dried herbs in the butter and mix well, add some salt.
2. Add the tomato puree until you get the desired flavour of tomato and add some either chopped or crushed garlic. Refrigerate until your guests arrive.
3. For the herb butter: Chop up all the herbs and the garlic (or use a garlic press) and then mix the ingredients together in a bowl. Add salt to your liking. It's as simple as that.
4. Just refrigerate it until your guests arrive. Enjoy with a lovely piece of meat and bread!

*You can soak in the dried tomatoes yourself. Here's how you make it: Get a couple of tomatoes and cover them with just enough water in a bowl, add 2-3 bay leaves, some crushed garlic and a splash of vinegar. Let the tomatoes soak in for at least 3 days in the fridge before using them.
